# Potato Soup

## Ingredients

- `1` TBSP olive oil
- `1` white onion
- `100` g, peeled and chopped
- `1200` g potatoes, peeled and quartered
- `32` g better than bouillon vegetable
- `32` oz water
- `14` oz can coconut milk
- `1/2` tsp dried rosemary
- `1/2` tsp dried thyme
- `1` tsp salt
- Black Pepper

## Directions

- saute onions in butter
- add everything else to pot and bring to a boil
- reduce to a simmer and simmer for 30 mins
- blend with immersion blender
